it depends how gung ho you are about gaining the weight... if your serious about gaining then you'll just need to keep eating eating eating... otherwise, you'll need to cut out some of thoes carbs... sugar carbs to be exact. wheat breads are slower digesting, and you won't get thoes sugar induced insulin spikes... pm me if you have any questions

Your diet is pretty weak, you obv have enough calories as you are getting fatter but your food choices and the number of meals is poor. You need to be eating at least 5 meals a day so make your portions smaller and eat more frequently. Each meal should centre around a large serving of protein, get about 1g per lb of bodyweight each day. If you want to limit fat, dump the baked beans, juice, crisps and soup etc, they are all loaded with sugar.
Get your carbs in early, say in the first 3 meals of the day to limit fat gain eating lots of oats, wheat bread, whole pasta, brown rice, sweet potatoes.
Also drop calories a little if you're gaining weight too fast. However you are "bulking" so you have to get away from the mentality of i must be super lean all the time and accept some fat gain so that you grow. Once you strip it off again you'll look much better. Short term pain for long term gain!"Before you cut, get something to cut around" - Me

You shouldnt need to snack. Split your feeding into 5-7 smaller meals spaced out every 2-3 hours and you wont be hungry. Good thing to eat in smaller meals in the evenings are nuts, cottage cheese, eggs, meat, veggies, salmon casein protein powder (calcium casienate/milk protein concentrate). These are all high in protein and some contain good EFA fats too which are great to make up the calories in the evening when you are trying to avoid carbs.
Simply put, eating your 3 meals a day spaced out like every 5 hours is FAR from optimal."Before you cut, get something to cut around" - Me

Wow, you're getting fat on a bulk.
Your meal plan is bad, you really should be eating more meals a day. It will also help speed up your metabolism. Like it's been said, only eat carbs in the morning/around the time you workout, avoid them later in the day. Eat more meats too.
I also just don't agree with the foods in your diet, you're eating way too lightly. Now that I look at it, I don't even really see how your gaining fat with that.
Get some peanut butter, some red meat, milk, etc. Eat some fast food every now and then. Throw in some 99% dark chocolate, eat what you want when you want. It's time to bulk.
You can always cut the fat whenever you feel you need to. But are you even competing anytime soon, is there even a need for you to be really light right now other than personal preference? Gain some weight, get some muscle, some fat, some strength, then cut down and you'll be alot happier with yourself with the easily visible new pounds of lean body mass.
