My diet was pretty much the same for the entire 10 weeks I was dieting down for my show...

I maintained 8-10 meals a day. I ate 25 grams of carbs twice a day (breakfast and early lunch). My protein and healthy fats took care of the rest.

I really didn't break my routine up on contest day, I had my 25 grams for breakfast (1/2 cup of oatmeal) and I SLOWLY snacked on my half sweet potato and boiled chicken prior to the show.
