I havn't used soy sauce, but what is in it carb/pro/fat/calorie wise?

Mustard is good, but usually a can of tuna is going to have a nice amount of sodium in it already, then when you add mustard, you get a pretty high sodium meal. If that bothers you, then you could check out lower sodium options or not.

    Re:

Soy isn't good for bodybuilding. Unsweetened apple sauce or apple butter is good to flavor tuna with especially if you chill the apple sauce.

Also, how much sodium is the max i should be consuming per day? I think i probably take in too much, as I put garlic salt/old bay seasoning on my grilled chicken every day too =/

Yes soy sauce is mostly all sodium. You can get low sodium versions though which would be better.

you could even make a good "chicken fried rice" witht he low sodium soy sauce.

all you have to do is scramble an egg, throw in some cooked brown rice, throw in some soy sauce, throw in the chicken, and then throw in vegatables.
