Something my girlfriend and I made up a few weeks back... figure I'd share it with you all.
Layne and Isabel's low carb cheesecake masterpiece
ingredients
2 lbs no fat cream cheese
4 whole large eggs
1 tsp vanilla extract
1 tablespoon cinnamon
4 oz (1/2 cup) low carb no fat milk
1 cup cooking splenda (sucralose)
directions
preheat oven to 350 degrees
using no fat cooking spray, spray 9" pie pan
mix ingredients together using an electric blender in a large bowl
pour mix into pregreased pan
heat at 350 degrees for 40-50 minutes
remove from oven and place in refridgerator
YOU MUST LET THIS SIT AT LEAST 4-5 HOURS IN THE FRIDGE if you want a decent cheesecake.
Totals (if you cut it up into 8 slices)
per slice
Protein- 20g
Carbohydrates- 6g
Fat- 2.25g
Chocolate or vanilla protein powder can be added to mix for flavor and more protein if desired.

Actually since i've been living with my girlfriend while in florida the last few weeks I have been cooking almost every meal for her. She keeps telling me how delicious everything is and she can't believe how much better she looks since she started eating my cooking. We actually discussed perhaps opening up a Nutrition Cafe in the future, where people could choose from low fat/low carb foods and I would list the pro/carb/fat for each dish

I'll drive up there just to eat there . I don't get around much in Florida. Maybe we, The Four Horsemen, could squeeze in a workout .
BTW, my cheesecake is in the fridge chilling now. It'll be ready at around 6-7 PM. Can't wait
I followed the reciepe exactly except I added 1 cup of Low Carb FF Milk instead of 1/2 cup .

I must say it was pretty good for being low carb and low fat.
I sifted some cinnamon on the top, and ate it with low carb syrup.
One thing I did notice is that it made me really full!!!!!
Very good reciepe Layne, thank you for sharing it with us. Next time I think I'll add some flavoring to it, like one of BSL's.
You were right Layne, it was pretty moist in the middle, but I just kept it in the fridge for another hour and that cleared things right up!.

I made it (with cream cheese) and I couldn't wait and it was in the fridge for 3 hours and I tried a bite and MMMMMMMM
I'm gonna throw some protein frosting on it tomorrow with some bananas and have that for a healthy snack!
How complete is the protein in it? Should it be counted for my daily intake?
