    sweet potatoe prep

    hi,
    any easy way to prepare sweet potatoe ? It takes me forever to peel them. I don't need any fancy preparation. Does anyone just slice and bake and be done w/ it ? Or, is the peeling necessary ? thanks.

    I never peel sweet potato - half the goodness is in the peel (fibre, vitamins, minerals and phytochemicals).

    I usually bake, steam or microwave them with the skin on.

    For baking I just cut it into stips (sweet potato chips) or chunks and then bake... If you sprinkle over some paprika, chilli and tumeric it is RELLY yummy! You can also add garlic to make then even better! With steaming I just cut it into chunks, add some garlic, lemon and some mixed herbs to the water and steam as per other vegetables. For microwaving I just stab a couple of holes into it (so it doesn't explode ) and then cook it on the 'jacket potato' setting (or just microwave for a few minutes each side).

    I always eat the peel.. i find it Yummy! I just take a knife, stab it a couple of times, wrap it in a wet paper towel and microwave it until it's soft.. and then I bust it open and sprinkle on some cinnamon YUM! i'm addicted!
