see i've only ever eaten pumpkin in a savoury form, mostly accompanying roast meat (lamb, beef, pork) and always with sweet potato roasted as well.
Using pumpkin or sweet potato in dessert style dishes really isnt common in australia and i've never tried it
when u roast pumkpin or sweet potato with a light glaze of olive oil - damn it is s fkn good. Develops an incredible crunchy golden skin that I could eat forever

you can get a slight idea of what I mean by this pic - however it doesnt quite do my mental image justice
The middle of the pumpkin kind of melts a little , but the outside gets deliciously crunchy and golden (i actually love it slightly slightly burnt lol) and ithe sweetness inherent to the pumpkin or sweet potato just works so well and contrasts incredibly well with gravy"There's levels of retardation most people don't even know about"

Yeah, apparently the pumpkin in the us and the pumpkin in Aust taste very different. I had some friends over from the US and they almost died when I served them my lamb roast with pumpkin, but they actually said it tasted totally different, much stronger flavour in Aust.
I also served the same dish to some friends over from Switzerland. They took upmost offense, in their country they apparently only serve pumpkin to farm stock.
Who would have thought pumpkin is such a controversial food?Proud first female member of the Manly Man Club!

Banana Berry Frozen Mouse
2 cups " no-salt-added" cottage cheese (1% milk fat)
1 ? cups frozen mixed berries
1 cup frozen bananas chopped, slightly thawed (chop before freezing)
8 packets artificial sweetener (or 1/4 cup honey)
Combine all ingredients in a food processor or hardy blender, blend until smooth. Enjoy immediately!
Serves 4 (1 cup)

great tasting (sorta healthy) peanut butter ball recipe

in a bowl mix:
1 cup of peanut butter
1 cup of protein powder and
1 cup of honey
then add:
1 cup of peanuts
1 cup of granola
1 cup of oatmeal
1 cup of chocolate chips
stir until mixed
roll into balls and put in fridge, makes about 38
they taste absolutely amazing. it's a great snack when you're in a rush

"Ants on a Log" is a favorite snack around my house. I started making it as a healthy snack for my kids and found out I liked it too. Its easy to make. Just fill a celery stalk with some natural peanut butter and stick some raisins into the peanut butter. You get protein, healthy fats, fiber, and anti-oxidants in a quick and tasty snack.

Emeril's Red Beans and Rice:
Comments: I cook up a batch of this at the beginning of the week and take it with me to school for lunch. Can have up to 60% daily sodium... Id try cutting out the salt and getting low sodium ham steaks. You can also used canned red beans if lazy, although they will probably add a good amount to the sodium and other junk. Serves "8", so for our purposes, probably makes 5 or 6)
Broken down to 6 servings:
760 calories
100 carbs
42 protein
17 fat
2 tablespoons vegetable oil
1 cup chopped onions
1/2 cup chopped bell peppers
1/2 cup chopped celery
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1 teaspoon dried thyme
2 bay leaves
1 pound boiled ham cut, into 1/2-inch cubes
6 ounces smoked sausage, cut crosswise into 1/4-inch slices (1 cup)
1 pound dried red beans, rinsed and sorted through, soaked overnight and drained
3 tablespoons chopped garlic
8 to 10 cups water
Steamed rice
Heat the oil in a large saucepan over medium-high heat. Saute the onions, bell peppers, celery, salt, cayenne, black pepper and thyme for about 5 minutes. Add the bay leaves, ham and sausage and saute for 5 to 6 minutes. Add the beans, garlic, and enough water to cover the contents in the pot. Bring to a boil, reduce the heat to medium, and simmer uncovered, stirring occasionally for about 2 hours. Add more water if the mixture becomes dry and thick. Use a wooden spoon to mash about half of the mixture against the side pf the pot. Continue to cook, stirring occasionally, for about 1 1/2 hours, or until the mixture is creamy and the beans are soft. Add more water if it becomes too thick. The mixture should be soupy but not watery. Remove the bay leaves and serve with steamed white rice.

Pumpkin Pizza
1 can of 100% pure pumpkin
14"-16" of pizza dough
Mozzerella cheese (low fat)
Parmesean cheese (low fat)
Cinnamin
Nutmeg
Splenda
Preheat the oven to 325 degrees
First put the pumpkin in a large bowl and spice to desired flavor. I just eyeballed the cinnamin and nutmeg with a little bit of Splenda. Next put the dough into the preheated oven for 2 minutes to harden the dough a bit then take it back out for the adding of the pumpkin.
Spread the pumpkin evenly across the dough (which should be on a floured/spammed pan) and add the cheeses to desired amounts. Put the prepared pizza into the oven again for 15-20 min or until the cheese is bubbling and the crust is golden. Check often.
I don't know the macros for this, but it tastes amazing! I'm sure you could add Whey poweder or some interesting ingredients to make it better. Enjoy!,___,

Peanut Butter, Banana, and Jelly French Toast Sandwich
What you need:
2 Tbs. Natty PB
2 Slices Whole Wheat Toast
1/2 Banana
2 Tbs. Sugar Free Jelly
2 Egg Whites or 1 Whole Egg
Touch of Milk
Touch of Vanilla Extract and Cinnamon
Basically all you do is first make a PB, Banana, and Jelly Sandwich. Then, in a separate bowl combine the eggs, milk,cinnamon, and vanilla extract. Then dip eact side of the sandwich in the mix and cook until brown in a pan. Comes out awesome because the bread is nice and soft and the peanut butter and banana kind of melts together.May 2004--295 lbs.
June 2005--164 lbs.
July 2006--Spinal Fusion Surgery--no serious lifting for 18 months
April 2007--154 lbs. (unhealthy)

it really does taste pretty much like a cheesecake...people get turned off by the idea of cheese being on it but it kinda added to the goodness of it.
like you said, just add some PB or Whey and it would be pretty damn good. i had it with low-fat pumpkin icecream and it made it 10x better.,___,

Blueberry Pancakes
Ingredients:
1/3 cup regular oats (not instant or steel cut)
1/4 cup blueberries
3 tbsp. egg whites
1 tbsp. nonfat milk
1 tbsp. fat-free cottage cheese
1/8 tsp. vanilla extract
1 tbsp. flour
1 no-calorie sweetener packet
2 tbsp. water
pinch salt
Directions:
Combine all ingredients except for the blueberries and stir until well mixed. Gently fold in blueberries. In a skillet sprayed with nonstick spray, drop batter into pan to form 3 pancakes (or 1 big pancake). Once pancakes begin to look solid (about 3 minutes), gently flip (if possible, re-spritz the pan with nonstick spray as you flip 'em to prevent sticking). Cook for approximately 3 additional minutes, or until both sides are lightly browned and insides are cooked through. Now plate those suckers and enjoy. Serves 1.
