I just boil Sweet Potatos and eat them plain, since they're quite sweet.

I've not had any BP in years but have been meaning to have them, but what I would do is Microwave them and eat them with Cottage Cheese, Coleslaw and Butter.

Ive found that the best way to cook is to steam them!

when ever I Microwaved them they alwise dried out, so I steam up enough for a week and keep them in a plastic container in the fridge with paper towels in the container to soak up the moisture.

Micro for 2-4 minutes depending on size, then bake for 15-25 minutes on 380-420, depending on how crispy you like the outside.

If you can't wait 15 mins, micro them a little more (not much), and put under the grill/broil to 'bake' the skin.

I usually put them in the microwave, then cut them in half and put some cottage cheese on them. Yesterday I mashed up a leftover baked sweet potato and put it in the microwave, then mixed in cottage cheese. Soooo good.

I poke a few holes in them, wrap them in foil and bake at 400 for about an hour.

For eating- I add some spray butter, cinnamon and sometimes a little fake sugar or vanilla yogurt (about a Tbsp or so).
