is it possible to just make ice cream out of skim milk?(with a added protein powder of choice)

When you're making your own ice cream I think you're stuck with the high fat stuff. My mom tried making some ice cream with reduced fat about 10 years ago and it didn't work. I think reduced fat ice cream is something that needs to be left to synthetic ingredients (not home made in otherwords).
Go for frozen yogurt or sorbet, you'll have much better luck in those categories.I am the master of my fate,

I think you will find that the frozen yogurt is worse for you than regular ice cream. A lot of HFCS. I take one scoop of low fat icecream, mix in some natural peanut butter and throw some frozen berries on top. Lots of protien, low in fat and the berries help take up the space in the bowl that I'd normally reserve for more ice cream.

Why exactly don 't you want the fat in ice cream? Don't believe what you hear about sat fat being bad for you. Some is neccesary for testosterone production after all. But if it's because of the extra calories than here is something I conjured up myself.
Chocolate Cottage Cheese Ice cream:
1/2 cup 2 % cottage cheese
1/2 teaspoon stevia or other sweetener (might have to use more or less than 1/2 teaspoon depending on the type)
1/4 scoop chocolate flavored whey protein or 1/2 teaspoon unsweetend cocoa powder
1/2 teaspoon cinnamon (optional)
DIRECTION: Combine all ingrediants and mix well. You can put in a blender and than freeze or just eat as is.

Try this:
1c cottage cheese
splenda or sugar free syrup
1/2c milk(any kind)
1 tsp xanthan gum (a natural thickener that can be found in the bakery section of grocery stores)
Combine ingredients in a blender, blend, and freeze for 1-2hrs.

I've never tried that. Don't subsitute it for milk though, as the xanthan gum will make it very thick.
