On my upper day I do three sets flat bench and and three sets incline dumbbell 6-10 reps. I also do dips but I don't go past parallel and try to stay upright, so I don't think it hits my chest. On my second day, I do flat incline dumbbell 8-12, and then depending on whats available or which one I want to do, it's either flat dumbbell for 8-10 or flat bench 6-8 and I do upright dips again. I've seen a lot of comments saying that flys are really useful for chest AFTER your presses. The only thing is that I don't want three chest exercises and 9 total sets for chest in one workout. So I was wondering if I should either replace incline on my second day with a cable fly, alternate weekly between incline and flys (week A I do flat bench + incline, week B I do flat bench + flys) or if I should just do flat bench, incline dumbbell, and flys all in one workout.

Flies are great as it really emphasizes the stretch. However, it's not a MUST. In fact, I'd be hard pressed to find a single exercise that I'd consider a must. Pick exercises that are fun for you and get you a great SFR (stimulus to fatigue ratio).
