Bear has fat marbled through the big ones. Id say its a bit greasy, but I take most of the fat off when I butcher them.
Smaller bear are a bit better.
beaver has a lot of fat, but you can trim it off easily if you take the time to do so. We didnt trim much when we ate some a while back, but beaver fat has no gamey taste, so it was awesome.See BrianDaMans sig.

Both, but trapping is way more efficient, I have sole legal trapping rights to about 150,000 acres. I have to take a certain number a year or I can lose my trapping rights to the area. it is technically commercial fur trapping and is regulated as such. I have to take between 30 and 40 a year to keep my license, which allows me to have a pimped out cabin on crown land as well.
We use kill style traps, kind of like big mousetraps.
While I have and do eat beaver, the freezers are usually full this time of year, so a lot of beaver this year (once skinned) are used for wolf and coyote bait later on.
Our deer population has taken a chit kicking, so some canine population management is in order this winter...hence the need for bait.See BrianDaMans sig.

Sat in the boat and watched this doe get harassed hard by a ten point buck.
He's just over the hill. It's rut, so he was trying his best to get some deer poosay, but she was having none of it.
The buck was hard to get on camera because he was bouncing all over the place after the doe, but still kind of nervous, like a miscer at a night club.

While furry, they look like they occasionally will leave the lodge to eat some sticks only to return in severe gastrointestinal distress causing them to lock them selves in the beaver lodge bathroom to heave and groan for three or four hours, forcibly excising a 18" beaver log that dams up the toilet, causing overflow and flooding until the beavers have to call a plumbing otter who will plunge aggressively for hours on end with his fur pulled up around his nose to clear the girthy, woody, obstruction.
