I got an amazing offer on my standard barbell Olympic plates and sold them. I have an opportunity to purchase about 700 pounds of new-condition Ivanko revolvers at about retail price. What are your opinion on these plates? I remember seeing them used in photo shoots in Flex magazine, MD, etc.

The quality of revos has fallen over the past 5 years or so. There are threads about this here. Some of the plates look pretty bad with lots of foundry putty.
I sold all my old revos and OM plates about 3 months ago for $2 a pound. They will eventually be replaced by Rogue's US made deep dish plates.▪█─────█▪ Equipment Crew #53 ▪█─────█▪

I've owned some older revolvers and machined deep dishes (5+ yrs) probably and they were finished way better than my rogue six shooters. I had them both at the same time.
The paint on ivankos is very thin but in my opinion it wears down evenly instead of chipping like my Rogue plates already have in a few places after 1yr. Even if the new Ivankos got worse they still probably be in par with Rogue. Ivankos paint tends to patina instead of rust if theyre used and not abused.
The only other grip plate that's comparable is Rep equilizers and I've read that they are better finished than both ivanko and rogue.
