I too have been puzzled why Americans (regardless of race) only see race, and don't seem to understand the concept of ethnicity.

Americans literally call non-whites 'Ethnics' - they don't seem to understand that whites have ethnicities.

I think it's because White Americans and Black Americans are very mixed ethnically, so black and white Americans seem to disregard the concept of ethnicity (and seem to try to push that on to the rest of the world)
