I have a question regarding the protein content of peanut butter. I know it says peanut butter is high in protein on the label, but is this kind of protein absorbable? I've read different literature on this topic and there seems to be some dispute. Does anyone know if peanut butter should be included as a source of protein, or should it count as fat only?

yes, it is an incomplete protein, but assuming you are eating a large enough variety of foods, then you will eat a different source of food that will make the protein from the PB a complete protein.

PB for that fats, but I count the protein definatly.
Although it by itself may be incomplete the chances that I am eating it with a complete protein are very good. To the best of my knowledge the coupling of the two work in this such formula:
Complete Protein Source + Incomplete Protein Source = Complete.

incomplete + imcomplete = complete
(even though it sometimes depends on where the incomplete's come from)
