Pho. it just doesn't get any better. those who disagree, haven't tried it yet, or just flat out have bad taste.
that great, fatty broth. the flat rice noodles. the scallions. the fresh herbs, bean sprouts, spicy chili peppers and lime wedges. the rare flank, or vietnamese meatballs, or tendon, or tripe, rough brisket, or all of the above. the fantastic interaction of salty, sweet, sour and savory- it just doesn't get any better.
some like to top it with sriracha, or fish sauce, or hoison, or sate sauce. i like to go with a little chili sauce and hoison, in addition to the cilantro, basil, bean sprouts, and lime

you guys should definitely find your local vietnamese noodle or pho joint, and give it a try.

Surprisingly there's lots of Pho places in Winnipeg. I shall try it soon.

das it. for a beginner, stick with flank or beef, rare. I wouldn't go with the tripe, tendons and all the nibbly bits just yet. ease yourself into it. put all the toppings into it, including the lime squeeze. if you like it a lil hot, put some of the chili paste in. but go easy, some are hotter than others. also, a couple squirts of hoisin is good
