I'm a 41 year old man who's jobs means he travels all week staying in hotel 4 nights a week I have no access to a fridge or a microwave and I'm looking for tips on diet on the go for building muscle.

Any food you like and have access to that fit your macros.
Any restaurant, fast food place, most deli/bakery places....Short cuts to success are often paved with lies.

Without access to a fridge and no microwave, you really have no choice but to eat out. Assuming you live in the US, the calories for meals should be posted on the menu. You can keep track of your calorie intake easily.
