It's been apparent though the whole show Floki is pretty mental. Not to mention the show leaves it pretty ambiguous as to whether gods are real or not. I listen to the Vikings Show Podcast and the actor who plays Floki even admits himself part of Floki's religious fervor is a a psychological problem. It could be that something clicks in his brain with Islam (how devout and focused they are on their worship) and he simply admires that. It makes sense to me.

I am surprised they offed him so early, they missed a decent bit of notable history between Ragnar and his sons that can foreshadow the greatness of his sons.

Didn't even know that. That's pretty cool, and I'm glad they didn't kill him at the end of s1. He really nailed the part. If only they knew how good he was going to play out, if the actor got a part as one of the sons this next stretch could have been so hype.
I don't know about other people but I think they poorly picked Sigurd, Ubba, and Hvitserk. I dont mind the guy playing Ivar for the way they took his character, and despite his gay ass haircut he's been a good actor imo.

I'm still just disappointed we wont see this play out.

Ragnar got jealous of his sons conquering a couple towns, and set some dude as the jarl of Sweden, telling him to protect Sweden from his sons. He then went across the sea to pillage and to show his own skills. Which ended up in his death

I feel like that would have been a good set up to show how strong the sons are/will be. Since most people probably haven't looked up anything on them, a little foreshadowing would have been good. Especially since it seems the only son worth noting at this point is Bjorn, and potentially Ivar. The rest of the sons haven't been apart of anything really.

They saw how good he was during season 1, that's why they didn't kill him at the end of it and made him the consistent main character up to now. Ubba is growing on me, but I don't like Hvisterk all that much (it seems they relegated him to a minor character, he doesn't say or do much at all) and absolutely cannot stand Sigurd and his stupid face/mullet/acting.

I'm still just disappointed we wont see this play out.

I think they avoided that storyline because a) they want the overall storyline to be a family drama and therefore are moving on to the next generation, as a major plotline including Ragnar would still make him the main, and b) they wanted to end Ragnar on a good note with his sons, in that they will want to avenge him and he hopes they do well after his death, particularly Ivar, the 'most unfortunate' one of them all.

Rollo is basically in charge of that area (the bulk of the French coast) so its people are under his control. Even if they revolted it would take time to organize a military response, and by that time he would have left with Bjorn. Also, Bjorn may have forgiven him, being family and all, and their culture puts a lot of value on making a name for yourself, so after they punished him via keelhauling, it may have been enough. As far as the Christian vs. Muslim thing, I think you are being oversensitive to a decent plot device and I already mentioned why Foki might behave that way in a previous post.

Lagertha becoming a lesbian (or bi) isn't really a stretch. She has always been a strong, tomboyish (manly?) woman. Not to mention up to that point all the men in her life have screwed her over in some way (all 3 husbands). And her keeping Ragnar's sons alive is due to her (still) strong feelings for Ragnar, and she probably wants his sons to be famous and successful.

Time to stop watching Vikings.

It is not a feminist chit-show. Vikings were known to grant a lot of rights and equality towards women in that day and age compared to other cultures. For example, shield-maidens were a real thing. Your insecurities are corrupting what is in fact pretty historically accurate.
