    Talking Can protein sludge be protein fluff?

    Bought Xanthan gum. Tried to make fluff but it didn't work. What do? I keep hearing people saying that they can make fluff with like 5x the volume of the original volume.

    I tried these combos:

    -1 scoop ON chocolate whey protein, 2tbsp hersheys cocoa, 8 tbsp water, 2tbsp pb flour, 1/2 tsp xanthan gum
    -1 scoop ON chocolate whey protein, 2tbsp hersheys cocoa, 8 tbsp water, 2tbsp pb flour, 1 tsp xanthan gum
    -1 scoop ON chocolate whey protein, 2tbsp hersheys cocoa, 1/2 cup milk, 2tbsp pb flour, 2tbsp egg whites, 1/4 tsp xanthan gum

    I use an electronic mixer (with the whisk attachment) and I've tried to mix for 2 mins, 5 mins, but still just turns out to be sludge-like with a tiny bit of fluff but like nothing noticeable.

    What do? Am I doing something wrong? I'm trying to just make some kind of chocolate peanut butter tasting fluff with my chocolate whey, but it fails.

    Beat me to it.

    When I've made fluff I've used the casein + xanthan gum + diet soda method and its worked fine.

    His recipe (below) is basically the same as mine. Except I use 50g protein, 1 egg white, only xanthan gum, and no ice. Are my ratios messed up? Or maybe it's because of no ice? I am not sure. But if I throw in ice will it work better?

    34g Trutein Vanilla Protein (1 scoop)
    3 Egg Whites
    2 Packets of Splenda
    1/2 c. Skim milk
    8 - 9 ice cubes, finely blended <---- Magic ingredient.
    1/8 tsp Xanthan Gum
    1/8 tsp Guar Gum

    From what I've seen, some protein will fluff better/worse than others. In your OP you say you're using ON whey, his recipe he is using a different brand. I've had luck with ON Casein w/the recipe I mentioned above.
