Replacing Squat/Deadlift with a trap bar

There is obviously trap bar deadlift which is in the middle of these 2. But 1 exercise never fully does the work of 2 -- so what else should I sub in? I have dumb bells as well.

At the moment the plan is trap bar lunges.

Although nothing can ever replace barbell dl and squat, Trap bars are as close a they get to the original. Do those and db lunges.

You can do both variations with a trap bar as well. Keep your hips higher to do a more of a deadlit. You could also put a block or a couple of plates under your feet when doing the squat variation to make you sit lower.

I've actually started doing both in my current cycle of 531 BBB as my 5x10 assistance work.

How in the bloody hell do you plan to do lunges from inside a trap bar?

You can do them by facing one side of the weights to the front and one side to the back. Basically turn 90 degrees from the DL position.
