So for a while iv'e been training by doing my own routine, I was doing 8x5, the last two sets would be repping out. After each workout, especially chest/legs I would get sore muscles. However I have now changed over to doing the 5x5 stronglifts.
Iv'e done 4 sessions now so I know what weights I should be using so that when it's coming to my last set I struggle. Iv'e not been feeling sore after though, my legs a bit because I squat each time but nothing like before.
Does that mean the intensity of my workout isnt enough? I had the impression that (to put it very simply) muscles tear after working out and then when they rebuild = more mass. Therefore i'd assume they should be aching a bit the day after?

Nope, not necessarily. DOMS does not necessarily mean you had a good work nor that you had a bad one.
DOMS are one of those fairly "unknown" areas, we kinda know why and then again we kinda don't know why it happens and it's correlation to growth. For most the DOMS subside over time unless you change your workout routine.
It's not a marker of a good or bad workout and not something you necessarily need to chase after.

I thought the reason for doms was because of lactic acid build up is this false?
Why do I do this weightlifting thing for the last 34 years with all its ups and downs life has handed me? Because each time I came back stronger. NEVER GIVE UP. Gym life is about more than muscles getting bigger and weights going up. Its wisdom discipline dedication humility you name it.

I haven't seen a study that actually confirms a cause for DOMS yet, most are theories and most have contradictory studies against them.
The closest theory I have seen that "might" be a good cause for it is this:
products of macro****e activity and intracellular contents accumulate in the interstitium, which in turn stimulate free nerve endings of group-IV sensory neurons in the muscles leading to the sensation of DOMS.My story going from obese to fit while battling daily chronic headaches:
