I just began taking creatine and want to make sure that I am hitting my water intake goals. I take in a decent amount of water daily now however I want to make sure that I am hitting at least a gallon a day initially. I usually drink anywhere from 40-60 ounces intraworkout with BCAA's. Would this count towards my "gallon goal" or should free water be the only thing to take into account for tracking purposes?

Yes, water drank intra workout counts towards your intake. In reality, just keep water on you and sip frequently throughout the day and you'll be fine. I don't even measure the amount of water I drink because I always have a glass of water around me and am sipping on it.
Progressive overload + progressive eating = gains. Simple as that!

I try drinking a water bottle worth at least 8 times a day. So at least 100-120 ounces. Make sure you stay fully hydrated.

I would aim for 5 clear urinations per day, ideally 1-2 of them coming after a workout but this depends on when you workout obviously.
Everyone lives in different climates, trains in different climates, sweats at different rates, has different activity levels and lifestyles, heck - even the food they eat contains differing levels of water etc.
Gauging proper hydration by intake isn't a bad place to start, and for most 1 gallon is fine but considering all the above variables with regards to hydration, it might be better to measure or gauge the output. OP, as others have mentioned, just target 4L/gallon of water per day whether you mix it with anything is up to you!
