    help me eat

So here's the deal I just started lifting on Monday and can already tell my appetite is up. Along with lifting I want to change my diet. Right now my normal is waking up around 9:30 or 10 am skipping breakfast and eating lunch at like 3:30 pm then eating again around 9 pm. And to make it worse I almost exclusively eat fast food, mostly McDonalds and Taco Bell. I feel I have been under eating but don't really know where to start as far as the diet goes. Most of the info I have been reading is about counting calories and tracking everything. Is all of that necessary? What I want to do is start eating oatmeal with fruit and yogurt in the morning for breakfast and just eat chicken pasta and mixed veggies when ever I'm hungry throughout the day along with plenty of water. Would it be a bad idea to only eat when I'm hungry? Would there be much risk of over or under eating?

You wont know for sure if you're 'under eating' or not if you wont count your Kcal - unless you constantly see a reduction in your body weight (not due to water losses).
If you get hungry every 2-3hours, then you could try to maintain that diet.
But, if you are aiming to maximise your results, you should calculate your Basal metabolic rate (Ammount of Kcal burned throught the day); count your macros, and try to 'hit' them daily.

How you proceed, and how much effort you put into providing yourself with proper nutrition will hinge entirely on how badly you want to improve your body composition.

Doesn't really matter what you do in the gym if adequate calories and macros aren't supplied on a consistent basis.
