Just trying to get an idea of what overtraining in one workout really is. I usually hit for example chest around 23-26 sets each chest workout. Thinking of bumping it to 30. Is this too much? I do the same for back and legs but shoulders and arms i keep around 18-20 sets per workout.

Reps/sets doesn't really matter on their own.
What matter is the volume if you goal is hypertrophy.
More reps = Endurance.
Less reps = Strength.

This is the kind of volume that IFBB pros do. Personally I think instead of expanding your training to simply a 'more more more' approach you might want to consider reading up on strength training protocol and how programming differs between novice, intermediate and advanced athletes, applying this to yourself and implementing it in a bodybuilding friendly fashion.
Just to jump onto this comment here, just IMO a really good way to think about training volume, rather than the proper mathematical/training definition of 'volume' always, is the number of moderately difficult sets, while taking account of the rough rep range that this was in.'People are gonna remember me as a god forever... That's far too much sets. You're much better off spreading all those sets in 2 weekly sessions instead of a huge one. You're not really priming your body for any more hypertrophy with that than say, 10-14 sets, you're just overtaxing your recovery.
