What I do right now for my post workout is one scoop of Real Gains (roughly 15g protein and 25 carbs) with one scoop of Animal Whey (25g protein). I'd like to swap out the Real Gains for Quinoa. Using 1/4 cup of Quinoa of get 27 carbs and 6 grams of protein. I'd like to keep my protein in my post-workout as close to 40grams as possible without having to use a second or half scoop of Animal Whey.
Any suggestions on a whole food that I can put in there? I thought about natural peanut butter but I make my shake in the gym and then go to work...don't know if I want a jar of peanut butter in my bag in case it cracks or something.

I think that you are WAY overthinking this. There is no anabolic window, and there is no need to limit yourself to 40g of protein.
Anyways, just mix it ahead of time using whatever you want.Supplement a good diet: don't diet on supplements.

You could even just make a shake and eat a PB and Jelly or PB and Banana sandwich on the side
eat some trail mix/granola, some cereal etc which you would prefer
