Let's say If i chose 5-8 rep range for my bigger muscles so I could choose between 5-8 reps if I wanted to do hyperthropy or strength work now I'm wondering, how would I alternate between strength and hyperthropy, Like everywork out do a bit of both or make it like a plan, 1 week hyperthropy or 1 strength?

Multiple ways you could do it. If you work each muscle twice a week you could do a heavy strength day and a lighter hypertrophy day full of dropsets and stuff. I personally like doing something like this:
week 1 rep range 12-15 not to failure
week 2 rep range 8-10 not to failure
week 3 4-6 not to failure
week 4 4-6 to failure combined with dropsets and supersets
week 5 repeat
