The meals may flux a little but I try to keep the calories between 1800 and 2500 daily.......I am cutting right now, does this sound like a good diet????? If I am too busy to make a meal usually I will grab a u-turn bar or a myoplex deluxe and use that (myoplex only for my post workout meal if I don't have time to make one........

You're doing well. Get an EFA supplement. Keep eating nuts...you don't have quite enough healthy fats. It does look like you are busy. If you want to take it to the next level ditch the carnation in favor of food. Get a good PW shake and switch up the protien sources...chicken, cottage cheese, beef.

I don't think you have enought protein....Meal 1, 2 and 4 you only have like 8 grmas each meal....That Turkey sandwich probably gives you about 20 grams....can of tuna...between 21 and 32.5 depending on size of can...Thats approx.....betwwen 85 and 115 grams of protein.....unless you weight like...115pounds, you need more than this.
