so I'm currently using the bio-x Power whey (chocolate), which tastes okay but could be better ha.
I've used the muscletech masstech before (chocolate) which i rate highly in the taste department, is there a whey out there that has a strong chocolate flavour like this?
thought it was worth asking.
Also while I'm at it, I've always been confused when it comes to chosing between blends/isolate/concentrate.
Is someone able to link me to something or shed some light on this?

My favorite chocolates are XF Ultra Peptide 2.0 Triple Chocolate and PES Select milk chocolate. Don't worry about the whey/blend/isolate thing. You really won't have a difference in gains. I would just avoid isolates, as they are typically a lot more expensive with 0 benefit (unless you're lactose intolerant).

Hey OP, look into Trutein for the BEST tasting protein blend on the market.
To answer your other question:
Blends: Typically consist of two or more types of proteins like whey and casein. In the case of Trutein, you're dealing with a tri-blend (whey/casein/egg white). Why the tri-blend? This allows for longer sustained protein synthesis.
Isolates: They are free from lactose. There is really no benefit to this unless you're lactose intolerant.
Concentrate: Is the most basic form of whey protein which includes lactose.

Last question: Am i more likely to come across a product with useless fillers in way of blends or concentrate? or are there any particular products that are known to have large amounts of fillers in them?
pretty broad question i know, but would rather quality over quantity so any i can avoid would be a bonus.
