The best local brewery here (that mosaic single hop beer I sent you awhile ago janks) uses almost all pilsner malt and 3% honey malt and they feel that 3% just adds a slight pop to their IPAs. They've not had a bad beer since doing this recipe on their single IPAs. Their DIPAs need a lot of work though.

Nice! Yeah, I've just been realizing there's usually a touch of honey or (im guessing) vienna in a lot of my fav IPAs, just to give a bit of sticky, sweet backbone.
Gunna start trying honey next time I brew one, but we just upgraded to an eHERMS and it's driving me batsht crazy trying to dial it in. Just been doing small pales as cheap test beers

Never used all pils though - I usually do pale 2-row and/or Maris Otter. Might have to look into that. I think Yellow Rose was an all pils malt bill, right?Common Sense Crew

I might just be tuned to it. One brewery used to use a lot of two row in their IPAs. My friend worked there and would take two row for his homebrew and I would hate on it, asking wtf malt he uses. He said two row. I then asked if that brewery used all two row, he said pretty much.

I've definitely noticed a cereal, cheerios, grainy, corn flake taste with 2 row ... but it's usually when I'm sampling the beers young.
That's another reason I've been giving them an extra week in primary/secondary to mature before dry hopping. That flavor seems to go away with a little extra time.Common Sense Crew

Meanwhile, I was BSing with my one friend the other day and we were bitching about how there are no sour brewers here, not even a brewery making a sour (perhaps you could say Ithaca but that's like one sour every 2-3 years)... And with the Finger Lakes and wine country a few hours away, it really makes sense. I was thinking it would be cool to do what de garde did and brew a bunch of wort and drop it off different locations around the lakes to see if there's any yeast in the area worthafuk of making a sour.

Chit was pretty crazy, but I did alright. Losing power from 2-6am was the worst that happened to me, thankfully. That and dealing with traffic this morning. 90/bw8 intersection was completely underwater, so went a different way and got stuck on the bw feeder for over an hour. Finally got out of that and had to double back to find a different route and start all over again. Hardly slept last night too between the constant thunder, the dog who's afraid of thunder going crazy, my truck alarm going off, the constant amber alerts telling me to watch out for flooding (as if the pounding of water we were taking wouldn't be sign enough), and the room getting hot as balls with no ac/fan when the power going out. But no damage to anything, and I'm still here, so all is well. How did you fare?

annnnnddddd I'm all caught up. Settled into Arizona for the next few weeks - Swingbrah let me in on two different Founders CBS tapping in the next few weeks so that's def going down.
San Diego was nice, totally slacked on my beer game though, only hit the MT tasting room (was able to try Black House w/ coconut & cocoa) and not a single other beer stop was made... for shame I knowEat Less, Exercise More, Repeat Forever
