I was lamenting to another gym goer the other day how much I hate chicken. He too suggested the George Foreman Grill which is what he uses. I remembered I used to have one and it worked quite well. Whenever I cook chicken on the grill it ends up being too dry. Then again I suck at grilling meat.

Dice it and cook with whatever else you are eating. I'm a big fan of risotto as you can throw in whatever you feel like.

This time of year I use the hell out of my crock pot. I put only carrots and potatoes ( big chunks ) in it so I can weigh it easy.
If you cook it in a frying pan on low with the lid on it will be tender & juicy everytime. Takes longer but it's idiot proof. Even if the temp of the chicken got to 200F, it will still remain tender & juicy. A little lemon on it near the end is good to.

I love to grill it. Don't do it too long or it will dry up. If the weather is bad I broil it. Even cooking it in a pan with a little spray of pam works. If you boil it you can drink the soup too. Eating it in a lettuce wrap is a nice touch.
Was 280+ at the beginning of 2019 (highest recorded weight is 290 on Dec 13, 2018).

OP: here is a great and healthy variation to do your Chicken Breasts: coat them with Olive Oil, dip them into Wheat Germ, and then bake them.....delicious and healthy.....essential fats, quality carbs and protein....Lift as MUCH as you can, for as MANY reps as you can,
while in complete control of the exercise.

I cut mine into small bits and then cook it in a skillet. keep it from getting dried out.
Also dont be afraid to season the hell out of them. Mrs dash is your buddy so use it. My fav is Mrs das southwestern chipotle. i put in on everything.
Dont be afraid of thighs either, the fats are good for you. For those I will bake them for an hour or so of course covered in the seasoning.
Pre cooked rotisserrie chickens are great as well. already cooked, just eat.

No matter how you cook it, you will lose some of the nourishment, it's just part of the deal. Unless you want to eat it raw...JK.
I see a lot of people are having trouble not drying out their chicken. One of the things I found is to beat your meat...yeah...pound the breast to a consistent thickness, say 3/8 or less. Saute in Olive Oil and butter, relatively high heat, to sear both sides. Put seared chicken in a 400 degree oven for about 10 to 12 minutes. Remove and cover with Alum foil to rest for about 3 to 5 minutes.
The oven time will determined by how thin you beat your meat. This will come with experience.
Another thing I found recently is Lowry's has a marinade that ain't bad at all. In fact, kinda real good.* Trad Archery Crew

I couldn't eat another plain chicken breast if you paid me too! lol
I cook only ground meats: chicken, 98% lean beef, and turkey. cook on stove top with a bit of water, strain and add some low cal, low sodium tomato sauce or sometime low cal soup.
I can add veggies, black Bean pasta, olive oil, whole grain bread, avocado, etc. Depending on my daily needs and taste.
A bowl of lean beef and veggies w/sliced avocado is terrific! And the macros area crazy good!"YOU vs. YOU" works!

I bake it in thick pieces, so it holds in the juices better. I use season salt, basil, garlic powder and onion powder, bake 350 1hr...making me hungry already
