Mixer taps were banned here for a while because hot water could be drawn back into the cold water storage, contaminating it

Our hot water isn't safe to drink because there is slime inside the boiler/hotwater storage/immersion and the temperature allows bacteria (like legionnaires) to thrive

It's not a problem now but a lot of houses just never bothered to update their taps, and new builds are sometimes built with separate taps just because it's what everybody is used to

I wouldn't really consider it an essential appliance, although it does seem like every single household in Australia has one.
