They eat a lot, they train heavy and many of them are big guys to begin with.

Strongman training places a lot of emphasis on overhead pressing movements. A strong mans big 3 are the squat, deadlift and the overhead press. Bench pressing isn't as important for them.
So all the overhead pressing is obviously the reason these guys have such huge shoulders.
The current worlds strongest man Zyundras Savickas has unbelievable power in his shoulders. No weight lifter in the world would get near him in overhead pressing movements. His best on the log press is 500 pounds. He's freakishly strong!
Genetics is also the other reason these guys are like they are, you'll never be a top strongman without being a freak genetically.
