    you should consider resting your meat longer after cooking...it looks tasty, but a bit over-done for my taste.

    it does depend on the cut of meat as well. i used to eat all my beef rare-ish, but then i realized that fattier cuts of meat should be cooked to about medium to render the fat into deliciousness.
