I totally agree--taking freakin' Wonderbread and dipping it in sweetened egg batter before dousing it with your Log House is not "French toast."
That said, a big part of the real French toast experience for me is the texture: having that crisp, sweet outer layer of the bread give way to the warm, doughy center before it mingles with the flavors of your reduction and explodes on your tongue is really important. Just to interrupt for a moment and bring this full circle -- I had a cross-country delivery arrive today:

Equal parts Chocolate and Snickerdoodle blended thick with ice and almond milk.
Yep--it's really good. Tasting the standalone Chocolate (just the powder so far), it seems like a very good mainstream "milk chocolate" variant, but nothing particularly unusual or remarkable; it does complement the Snickerdoodle perfectly, however, turning one of the "weaknesses" of SD--a weaker cinnamon component--into a strength. That fist link looks incredible. I have done something similar (baked french toast) but not to that level. I need to try this, though I also need to find a bakery in my area that caries brioche. Thank you sir. I wonder if you could make a protein version of this? Hmmm.....
Also, your Tarte au Citron looked incredible. I need to start baking again...I'm the clever one, you're the potato one.
