I am doing full body workouts 3 times a week. If I do it on monday, then my next workout will be on Thursday - and then Sunday. Point is, workout day is followed by 2 days of rest.
is this correct? Is recovery time okay?

What about Sunday/Monday? Or are you following the three day rotation, and not necessarily keeping within the standard week? Depending upon intensity/volume, you don't necessarily need three full days of rest. But, that's something you need to figure out based upon trial and error.
Bodybuilding is 60% training and 50% diet. Yes that adds up to 110%, because that's what you should be giving it. Change the inside, and the physique will follow.

7 days of rest for me, between equal workouts. Evidently I do a bodypart split though.
Really it's up to you, but that Sunday/Monday thing is not ideal, unless as mentioned before you do a three day rotation, some weeks with 3 workouts some with 2. Ideally a M,W,F split to be honest, this gives a decent rest period between each workout, plus a little extra at the end of the week. Try different variations of rest periods, that is the only true way to find what works best for you.
