Vegan bulking food staples for Type 1 diabetic ?
Hey, I'm new here to this forum. I was wondering if anyone would be kind enough to give me some advice on diet?
I'm Type 1 Diabetic, 19 years old and weigh 143 lbs and am 5'11.
I am vegan, and don't want to eat meat or eggs or drink milk.
I'm very lean and see my ab muscles etc, but I'd definately like to put on weight to get bigger muscles, as I visually have more in common with a skeleton than a bodybuilder!  I workout anaerobic and some aerobic almost every day and I know I need a higher calorie diet (I'm thinking around 2700-2900 calories a day) but am wondering what the MAIN food staples should be for a vegan diabetic?
My current diet is around 1800-2000 calories daily.. here is the type of foods I am currently eating:
Grapefruit
Banana (rarely)
Avocado
Broccoli
Artichoke
Tomato
Lettuce
Edamame (Green soy beans)
Peanut Butter
Almond Butter
Tofu
Soy Cheese
Soy Milk
Nuts/seeds (Brazil, Macadamia, Almonds, Sunflower seeds)
Raw Cacao beans
Ezekiel bread tortilla
"Atkins Advantage" bars or other low carb bars
Bija dark chocolate made with Udo's oil
Textured Soy Protein
That's pretty much the foods that my diet is made up of. If you have any suggestions on what I could remove or add from this list of food, and what foods to concentrate on, I'd really love to hear it!
Also, if any vegans and/or diabetics are reading this, maybe you could post your diet here to give me some ideas? Thanks!

If you're eating vegan and you weigh so little yet want to bulk up then seriously stop the cardio. that's just going to be burning up calories that would go to making you bigger and stronger.

I'm also a type-1 diabetic, so if you have any specific questions pertaining to that feel free to ask.
In general though, vegan or not, diabetic or non-diabetic; YOU flat out need to consume more calories in order to gain muscle mass. 5'11'', 143lbs is very thin; moreover, 1800-2000 cals a day is next to nothing, especially for an active teenager.
Here is what you need to do.... (copied and pasted from something I already wrote)....

Find something with cholesterol, because you may find your testosterone levels plummet on a vegan diet. It happened to me ; went from 400ng/dl to 65ng/dl, lost all my muscle, got depressed and tired and irritable. Not a good look.

I'm definately going to start using Fitday religiously for the next little while and try to get to 2700-2900 calories a day.
Thanks for mentioning beans - for some reason I hadn't thought of eating those at all. I ran down to the store and picked up a few cans of organic refried kidney beans (only sea salt, water, beans as ingredients).. are these OK to eat? Would cooking dry kidney beans be healthier?
I also found something called Tempeh in the freezer section which seems to be loaded with protein, so I'll give it a try too.
Should I really be looking for food with cholesterol in it? I don't want to cause any heart/artery problems since I'm at higher risk for heart disease. All the Type 1 diabetes info about cholesterol I've seen recommends avoiding it.. (???)
So what do you vegans & diabetics here eat as a main staple food(s) of your diet?

Vegan or not, another important factor is protein. I didn't see that specified here, so I thought to mention it in case it hasn't been said. You should eat around 1g of protein per pound of current body weight and then add a little extra protein for the pounds of muscle you want to gain. Beans, PB, etc. all provide good protein. Keep the fat calories around 20-25% of total calories and round out the rest of your calorie needs with quality carbs.
It's true the exercise is critical and having enough calories is essential to adding muscle. You can stay lean while adding muscle. The idea of "bulk then cut" is ridiculous. More so for a vegan ectomorph! I strongly recommend at least one consultation with a dietician or nutritionist with your weight training goals in hand. Best of luck!

I don’t want to sound like a dick but I would really only listen to your doc and to other type 1 diabetics with regards to diet and even then you should take caution. The info supplied here is fine so far but yeah just be careful as most non-diabetics have nfi what they are talking about.
I agree though deff go to a nutritionist they will help you the most. I saw you posted in this thread
