So for the last year the only pasta meal I make is 400g chicken breast (cut into chunks) & pre-flavored pasta (pasta in a packet with powder flavoring).
I want to keep the chicken as it is but I'd like to buy plain pasta & add a sauce to it for flavor.
What pasta type & sauce type do you like the most?
I don't want to add vegetable to this meal & I don't like sauce that has onion or big chunks of tomato.

Not too big on pasta and most other carb sources, but for the past few weeks I've been smothering Shiritaki noodles with goat cheese, chili garlic sriratcha, an egg, and some vegetables. You could try replacing the vegetables with the chicken and obviously pasta instead of Shiritaki.

But also here is a master list:
pesto
red pepper or sundried tomato pesto
a 'creamy' sauce made with mashed slow-cooked fava beans, rosemary, cracked pepper, olive oil
if you want Thai-style peanut sauce, mix together PB, sesame oil, soy sauce, fish sauce, and something sweet like honey or even a bit of orange and/or lime juice
toss the pasta and chicken with spinach and blue cheese or other cheese (though blue melts well and has a strong flavor), pepper flakes if desired

Parmesan cheese and lots of it!
I like a meat sauce, particularly sausage. However I'm quite partial to carbonara, overpowered with bacon. You can't go wrong with a nice garlicky Alfredo. But it all depends on the preference of the consumer.

I like "tomato and & basil" or straight up Marinara sauces for a red sauce. I like Alfredo sauce, but only homemade. I never found a good tasting bottled alfredo sauce.
As for pasta, I like angel hair pasta because it really holds onto the sauce.
I know you said you like to keep the chicken as is, but I would recommend chicken parmesan. You don't have to deep fry it (though that's my fav). Simply, pound the breast flat, coat it in EVOO and cover it with panko crumb/parmesan cheese mix, and bake it. At the last 5 minutes of baking, cover it with some sliced mozzarella.

Carbonara is the bomb. I know you don't generally like onion but the way this comes out the onion doesn't really taste like onion (I don't love raw onion myself except on a very few things, but I think onions cooked like this are delicious). No tomato, and no vegetable necessary (although peas work really well if you end up wanting to sneak one in).
I can hook up a sweet carbonara recipe that I make if you're interested. If not then make sure to avoid recipes that use cream. There's no cream in real carbonara.

Changing it up a bit ... and this is a meal high in calories so use it as you wish (decrease the portion size or use it for a "1 or 2 meal a day intermittent fasting regime).
But I've found that people that like pasta, like rice and risotto ... and those that don't like pasta, don't like rice and risotto. May be way off ... but just my experience.
So use measurements to your own discretion:
Butter in pan
Boil your smoked haddock (can replace with chicken, but less flavorsome and doesn't react as well with this risotto)
Whilst fish boils ... cook your risotto but add chicken stock little by little (simple OXO cube or KNORR stock cube works great)
I add fried onions but you don't like so skip (even though it makes it so much better )
Once risotto is looking nice and thick (I prefer it thick than traditional soupy risotto ... may take 20 mins when adding stock water bit by bit)...
add as much parmesan as you want .. the more the tastier, but as I said ... this is for a 1 or 2 meal IF meal if you want it to fit cals
add your smoked haddock ( or chicken) at the end.
