Almond Joy Overnight Oats:
-1 cup thick rolled oats
-1 scoop cookies&cream or chocolate phase 8
-4oz greek yogurt
-1 c unsweetened almond milk
-1/4tsp almond extract
-15g shredded coconut
-1oz sliced almonds
-1 coconut cashew quest bar (optional)
mix the oats, protein, yogurt, milk, and almond extract in a bowl or mason jar with a tight-fitting lid. store in the fridge overnight. in the morning, toast the almonds and coconut (I use a skillet on the stove), and heat up the quest bar for 15 seconds in the microwave. remove the oatmeal from the fridge and sprinkle in the toppings. enjoy!
didn't look all that pretty once I mixed everything around, but it tasted amazing, and that's what matters

The new Ben & Jerry's flavors are starting to wear at my self control. So instead of mess up my contest prep, I decided to do my own take.
I present to you, Banana Split Mosh Pit, which is vanilla ice cream with a banana raisin peanut butter swirl, coconut cookie dough crumbles, toasted coconut, grilled bananas, and whipped cream.
for ice cream:
-1/3c fat free cottage cheese
-1/3c plain, fat free greek yogurt
-3/4c milk (almond, coconut, or skim)
-1 scoop Phase 8 (vanilla)
-2tbsp P28 Banana Raisin Peanut Butter
blend until smooth. pour into a bowl and cover with plastic wrap. put in the freezer. pull it out every 30minutes and stir. when you take it out to stir it a 3rd time, drizzle the peanut butter in and fold it in, be careful not to overmix, you want to be able to see the streaks of PB.
for coconut cookie dough crumbles:
-2tbsp coconut flour
-1/2 scoop protein (phase 8 or cellucor pb)
-2tbsp almond milk
combine to a crumbly mixture. freeze for 30 minutes. mix this in when you mix in the peanut butter.
other toppings:
grilled banana- slice a banana in half length wise and grill in a hot pan on the stove top until it caramelizes (golden brown).
toasted coconut- take 15g of unsweetened, shredded coconut, and toast on the stove top.
add some fat free whipped cream on top.
enjoy!

Frosted White Chocolate Peanut Butter Coconut Donuts:
for donuts:
-1 scoop white chocolate phase 8
-2 tbsp coconut flour
-15g quick oats
-1/4 tsp baking powder
-1/4 tsp baking soda
-48g egg beaters (about 3 tbsp)
-60g plain 0% greek yogurt
-4 tbsp coconut milk
-2 tbsp brewed black coffee
bake @ 375 for 15-20 minutes
for frosting:
-85g 0% greek yogurt
-1/2 scoop phase 8 white chocolate
-2 tbsp coconut milk
-1 tbsp brewed black coffee
mix and refrigerate.
toast 15g of unsweetened shredded coconut (I used the reduced fat kind)
when the donuts are done, take them out of the oven and let them cool before frosting. sprinkle with the toasted coconut.
enjoy!
