Anyone from East Valley Arizona?

I know somebody did this thread a long time ago but I'm just looking for any recommendations from people of good places to eat in the East Valley. Preferrably Tempe, Scottsdale, Mesa, Chandler, or Phoenix.
Can anybody explain why there are no real Mexican places to eat around here that actually know how to make machaca?
