Why would you "stall" 5x5 by lifting heavy too soon?

Why would you stall by starting stronglifts 5x5 by lifting heavy in the first few weeks?

I mean I can squat 120kg for 1. So I'd get 100kg for 5 reps easy would I benifit starting with just the barbell and gaining my way back up to where I am right now in about 12 weeks time or would I just be wasting my time. Strong lifts suggests starting with the barbell than lifting too heavy..

    Thank you for any help.

The first few weeks are to help get form down. Focus on good technique and speed. You'll be lifting heavy in no time. If you aren't a total beginner then you can go a bit heavier but definitely not your max. Just trust the program and do as it says.
    yolo- you only lift once

    Sumo Deadlift: 480 x1
    Back Squat: 450 x1
    Bench: 240 x1
