I'll sometimes add a little worchestire sauce before cooking. Usually overnight. Depends on cut and seasoning.

Hey opie, good job on the steak man, I am definitely mirin hard, you obviously know how to cook a steak.. I figure I would share this with you if you are interested. I just came across this the other day and never thought to try it myself, dry aging in the fridge.

Also I have heard the "don't salt before cooking" argument, but how is it that that can make sense when the high end restaurants dry age their beef for weeks or months? It's my impression that this also draws moisture out. But meh what do I know.

Anyway here's the vid, maybe you heard of this guy. He's got three michelin stars and I've seen several of these episodes... the dude sure knows what the **** he's doing.

OP roast a clove of garlic, serve with steak. For the steak, try a 7 pepper rub without salt..season with salt after to your desire. But 7 pepper rub + roasted garlic = hnnng

Mah ***** using sea salt, but disappoint that you either didn't choose or your grinder doesn't have a coarseness setting. Coat everything in pepper crew.
