Hey opie, good job on the steak man, I am definitely mirin hard, you obviously know how to cook a steak.. I figure I would share this with you if you are interested. I just came across this the other day and never thought to try it myself, dry aging in the fridge.
Also I have heard the "don't salt before cooking" argument, but how is it that that can make sense when the high end restaurants dry age their beef for weeks or months? It's my impression that this also draws moisture out. But meh what do I know.
Anyway here's the vid, maybe you heard of this guy. He's got three michelin stars and I've seen several of these episodes... the dude sure knows what the **** he's doing.

EDIT*** Also lol @ the retards in here talking about hot sauce and "it's still raw", what are you 10 years old? This is not applebee's *******s, this is real steak. lol at drowning the flavor of the meat in chitty frank's red hot sauce.... especially a prime cut like porterhouse... just lol

Looks good. Only thing is... it looks like you used kosher or sea salt for the rub, but then you used a very small amount of normal pepper shaker pepper instead of fresh ground peppercorns. y u do this?
