I've never played for anything official or had any kind of real coaches to teach me. Is there a video or something out there that explains exactly what you're trying to do in different situations that the defenders may throw at me?

Can someone explain to me how a pick and roll works technically

I played lacrosse but it's the same across all sports that have it I'm sure. One player has ball, teammate comes and stands in front of defender trying to block them. As the defender gets around the "pick" the "picker" rolls off and is open for a pass.

This is written assuming your a guard. There is a variety of moves you can use with the pick and roll. You can use the screen and if the defender goes underneath it you can pull up for an open shot. If the defender goes above the screen you can use that as an advantage to drive past him. Many HS teams will switch the screen so you could have a big man playing you in which case you could either drive or post up the big man with the little man on him. The pick and roll comes when you drive off the screen and the defensive big man comes over to try and cut off your drive. It leaves your big man open if the other defenders don't rotate correctly. A pick and pop is when you drive of the screen and the defensive big man rotates over to cut off your drive. Instead of your big man rolling to the basket, he can stay where he screened and you can pass to him for an open shot. The final move you can use with the pick and roll is to fake like your goin to use the screen then drive away from the screen.
It is hard to master but can be almost unstoppable if done correctly.5' 11", 225 lbs

See what he does differently, study players that excellent at there craft. Some of the NBA teams that are playing right now run the pick and roll very well. Just watch the reactions and what the players do and copy them.

The pick and roll is basically an effective way to set up a play that leads to a basket. If you're the ball handler you have the option to use the pick as a means for an opening to score or you can dump the ball to the screener once they roll to the basket.
