I just switched to doing double overhand, and my grip gives out way too soon. The other day I went for a PR and could had gotten another 2 reps but my grip gave out. Any suggestions or will my grip just improve as I keep doing deads this way?

Why go for a PR if you know your grip is weak with a double over hand? That doesn't make much sense.
Stick with a mixed grip for your heavier sets and PR attempts. Work your double over grip on your warm up sets/lighter sets. Work on grip work as well on the side.My training log: https://forum.bodybuilding.com/showthread.php?t=178464441
