What are some unique Cheesecake Recipes?

I want to make cheesecake (well a KETO version). I want something i can munch on every once in awhile.

I have a few bland Cheesecake Recipes (ie. vanilla or chocolate flavor). But, i am interested in any unique recipes. Like coconut or creme boulee or some other type of cheese cake.

But, it must be 100% KETO with as very little carbs as possible, preferebly none or trace carbs.

Anyone?

i have no idea about an entire recipe but i was just thinking - i have some sugar free flavored syrup (0 carbs) that is amazing. i add it to my whey . its made by a company called Davinci. The flavors ive used so far are caramel , kahlua coffee liquoer, and hazelnut. you can get it at walmart - it should be in the same section as the coffee/tea/coffee beans. just be sure you grab the sugar-free.

but i would imagine you could take the keto cookie recipe that Eileen posted in a diff thread and use that for your crust - then use creamcheese/butter/any flavored syrup and whip all that together-----screw this im headed to the kitchen haha.

You're lucky ! I was in fact creating a recipe these days. I have my third version of it in the oven right now. And so far, it's very good. I was planning on posting the final recipe after some more experimentation, but since you're asking...

Here's what i did for version 3. Didn't taste it yet, but i think it's going to be my best one :

- 1 egg, preferably omega3 (not more, or it won't taste cheesy)
- 100ml of 35%-fat whipping cream. You can use butter too.
- 150-200g of full fat philly cream cheese, depending on how cheesy you want it to taste. I also add around 50g of french 3ple cream brie, but it's hard to whip.
- 30g ground almonds. It replaces flour. I've been gradually decreasing the amount I put in so you can try to reduce even further, but i wouldn't recommend skipping it totally. I buy ground almonds that really are reduced to a fine powder.
- any sugar substitue. I used about 3tbs of LIQUID sugar twin, because it doesn't have any volume agent (for instance, granular splenda contains maltodextrin). Don't be afraid of putting too much of this : you want a cake to taste sweet, not salty.

STEP 1 : make sur the egg, the cream cheese and whatever other cheese you add are at room temperature. That's very important.

STEP 2 : whip the egg and the cream. incorporate the cheese in small chunks and reduce to a puree.

STEP 3 : add the ground almonds and whip. try to get some air in the mixture.

STEP 4 : pour into a buttered mold and bake in pre-heated oven (350F) for 60 minutes or so. This has to be totally baked or the texture won't be right : so check with a toothpick that even the center is backed.

STEP 5 : chill for several hours. I left it in the fridge overnight.


Macros are the following, for a 6-inch cake or so :

1300 calories, 31g protein, 19g of carbs, 122g fat. Divide it into 6 parts of so, so it will be 3g of carbs or less.

Note that 6g of the carbs come from the almonds, 0,3g from the egg and 12,5g from the cheese. If you want to reduce carbs even further, you can reduce the ground almonds and/or trade more cream cheese for some other "creamy" cheese like brie.

So far, it made a cheesecake that had a new york style texture, not a smooth cheese pie texture. But that's precisely what i like. ;-)

Here is a variation i found in Chris Aceto's book. I havent tried it. But, its an interesting combination.. Its a Pumpkin Cheese Cake

Ingredients:
1 lb Cream Cheese
3/4 cup of Splenda
3 eggs
1/2 cup of Sour Cream
1 cup Pumpkin Puree
3/4 tsp Cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
_________________________-

Basically mix in all the ingredients and bake in water pan at 350 F for 50 minutes . Then refrigerate for at least 8 hours, up to 2 days before serving.

Per Serving:
Carbs: 4g
Protein: 5g
Fat: 17g
Calories: 189

Not entirely Keto, but still a good low carb option.

I made this, but used cottage cheese instead of cream cheese.

I'm not a picky eater, in fact, I've even eaten those novelty LARVA they sell at candy stores. But...

This recipe tasted like garbage

On a side subject, i tried this very basic atkins cheese cake my friend made. It sucked too, compared with normal cheese cakes.

It was like Cream Cheese with sweetener, cocoa powder and vanilla extract.

It ended up sticking to the pain and was just horrible, nothing like cheese cake.

Mmmmm, low carb cheesecake......(Said in best Homer Simpson drool like manner, LOL). I love em'! Posted this a while back...it's my wife's recipe - I\we eat it all the time, of course the Davinci's can be changed to suit taste if needed\wanted.


Dulce le Leche Chip Cheesecake

Crust: (or use your favorite)
3 Tbsp Golden Flax
3 Tbsp Regular Flax
6 Tbsp ground almonds (sifted for big pieces)
1/2 cup granula Splenda
4 Tbsp light or regular butter
4 Tbsp Hood 2% milk
1 Tbsp Special Dark or regular cocoa powder
1 Tbsp Erythritol (or sweeten to taste)

Mix all well. Spray bottom of 9 or 10" springform pan. Carefully spread mixture along bottom and up a little of the sides. Bake 350 for 10 minutes. Let cool. Once cool, wrap bottom of pan with foil.

Filling:

3 - 8 oz. bricks of cream cheese, room temperature
2 tsp vanilla extract
1/2 cup Dulce le Leche Davinci's
1/4 cup granular Splenda
1/4 cup Xylitol
3 large eggs, room temperature
3/4 cup Eat Well Be Well Chocolate Chips
1 Tbsp Carbquik

Whisk cream cheese, extract, Davinci's, splenda, xylitol and carbquik together very well. Then add the eggs one at a time mix until just incorporated. Stir in chips.

Pour into cooled springform pan and place in a water bath. Bake at 350 for 25 minutes then reduce to 300 for 30 minutes. Turn off the oven and allow to remain until oven is room temperature. Store in refrigerator.

10 servings

Full Fat cream cheese (Keller's light butter): 375 calories, 34 g fat, 5 g carbs, 10 g protein

Low fat cream cheese (same butter): 295 calories, 22 g fat, 8 g carbs, 12 g protein

The Erythritol and Xylitol are artificial sweetners. Carbquick is a product that is basically like Bisquick, only eh, very low carb. I can find most of these items locally, however, my wife does order them from the web at the following site - note, take out spaces as bb.com won't let me post the actual link. www.net rition.com

I tend to forget that not everyone keeps all this stuff on hand as my wife is REALLY into low carb cooking\baking.

Side note to the posted recipe - You said you want little or no carbs- that's kinda hard if you want it to taste good, BUT, I can state that I have eaten this, along with my wife, over and over, different flavorings etc., and to the best of my knowledge it has never taken me out of ketosis. If you make the full fat version, I think, well, there's so much fat, it kinda kills any insulin spike that measly 5 carbs is gonna cause.
