Do you eat the sweet potato skin or do you peel it off?
I just read this on WHfoods.com:
"If you purchase organically grown sweet potatoes, you can eat the entire tuber, flesh and skin. Yet, if you buy conventionally grown ones, you should peel them before eating since sometimes the skin is treated with dye or wax; if preparing the sweet potato whole, just peel it after cooking."
I guess it's smartest to peel the skin off if your not buying organic sweet potatoes, but many people still eat the skin..?

i've never even tried or thought about eating the skin. I just cook, peel, weigh, and eat.
If I grew it myself in my own garden, maybe it would be a consideration to try. But if it's grown and treated outside of my control (i.e., grocery store bought) it doesn't matter how many times I wash it, I'm still not trusting it enough to eat.

Many different opinions on this! But does anyone have a good source of information for whether or not it's safe to eat the skin if you scrub it/wash it?
I'm guessing "WHFoods" isn't necesarrily the best source for nutritional knowledge?

I've eaten the skin on a variety of potatoes. I wash them beforehand with a special wash first though.
