Some programs suggest eating 7-8 meals a day. What if my job doesn't allow food at my desk? I have to ask permission to take a ****ing piss and cannot take breaks until certain set times. Should I just eat 3 meals in one or what? How will this work?

Doesn't really matter how many meals, you can eat 1 big meal if it meets all your calorie requirement for the day.

until you get to a very extreme point in physical shape you dont need to worry about meal timing and all that jazz, just hit your macros and eat as often as your able.
Used to be 247lbs 40% body fat.

What ever fits your lifestyle as long as you hit your macros. Multi meals are not necessary. Check out the nutrition thread for better info on that!

My job is pretty much the same way. Here's what I do.
10am: banana + cup of coffee (just started this today. been off stims for 5 weeks prior).
12pm (immediately post workout): protein shake. Depending on how I feel that day it's 8-16oz skim milk and 1-2 scoops whey.
2pm: lunch. I start work at 3pm.
5pm: "bathroom break". I pack some nuts and a banana and get some water from the cafeteria.
730pm: dinner
12am (when I get home from work): another small meal/big snack.
Works for me, but my intake right now is only ~2500 cals.
