I'm currently doing the 2nd exercise, however I'm not seeing much development, size wise, in my triceps?

They are all good. Depends on you and how you end up doing them. Go with whichever you one you feel the best contraction in and/or see the best results with.
All of them are designed to stretch and target the long head of the triceps. If you aren't stretching your long head, though, you're essentially wasting your time with it and making it a lateral head exercise, which there are far better exercises for the lateral head.-

Ok realistically you're going to end up using multiple tricep moves.
You also neglected to mention close grip pressing work and dips.
I feel like I must be hitting a new level of weight lifting or something, because suddenly all of my lifts are skyrocketing and I'm having an increasingly difficult time trying to help newbies.

i personally prefer the first one. mainly because to get the weight in place for the 2nd one is kinda rough when you're going heavy. it's easier for me to get the weight up with the rope extensions. dont get me wrong though, they're both great exercises that work the triceps very well, but i prefer the rope extension variation.

Best to start with a compound exercise such as close grip bench or drips, and there are 3 heads in triceps so use exercises to target all 3 of them, Skull crushers, pull downs, close grip, dips, reverse push downs
