Trying to decide on a new protein!
Option #1: PEscience Select
Option #2: Vita Muscle Hydropump
I'm leaning more towards the hydropump just based on Fat-Carbs-Protein. BUT, the pescience select says it's made of two different sources of protein (whey & casein) vs. just whey protein which apparently makes building muscle easier? Semi new to this & want to make sure I'm picking the best quality.

For the most part protein is protein. You're not going to notice a difference between different types of protein. Go with whatever fits your budget and macros best.
Supplement a good diet: don't diet on supplements.

Not familiar with Hydropump.
As it sounds like you know, Select uses a blend of milk protein isolate, whey protein concentrate 80%, and leucine peptides. I'm a bit hesitant to actually claim that it makes building muscle "easier," per say, but it is optimal as far as absorption and fostering an anabolic environment goes: http://ajpendo.physiology.org/content/303/1/E152.long
Furthermore, Stack3d has tested Select for protein content. And if carbs and fat are a concern, 1.5g fat and 1g carbs is pretty freaking good if you ask me.

OP, out of the two options you've selected I'd recommend Select. I've had a few different flavors of Select and it is a very versatile protein (great for many different cooking recipes, stand-a-lone shakes, etc.).
You are comparing a Whey vs. a Blend. Neither one will yield better results than the other, as the goal of a protein powder is solely to help you reach your protein/macro goals. Another vote for PEScience Select, you really can't go wrong with it.
