    ***Officially the Unofficial Slow Cooker/Crockpot Thread***

    Noticed we need moar recipe threads here and I got into a slow cooker recently and realized I can make cheap meat delicious! For a college student, this is a total win as I can get something like short ribs for instance and make them for ~$7.00 and have a ton of protein, potatoes, you name it, with little effort.

    So currently, as I mentioned, I have some short ribs in the slow cooker that I coated in flour, browned in a pan, and then put in the slow cooker with onions, chicken stock and a little white wine. 6 hours on high, will have lunch for a few days now.

    Fajita Chicken

    Macros: ~612 43c/98p/6f


    1 cup Salsa
    1.5 lb Chicken breast
    2 tbs Fajita seasoning (I just use a generic fajita seasoning that comes in a packet)
    2 tbs Lime juice
    3 Bell peppers (color of choice)
    1 medium Onion


    1. Cut up peppers and onions.
    2. Cut chicken into strips
    3. Layer everything in the crockpot, starting with the salsa, chicken breasts, seasoning, lime juice, peppers, and onion.
    4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the peppers are soft and the chicken is cooked through.
    5. Serve.

    I use this for burritos and wraps and tacos and the like, but it's also pretty bomb for salads.

    Mexican Flank Steak I made the other day:

    A big flank steak, dry rubbed with cumin, paprika, chili powder
    An onion diced
    1 cup of water
    Put all into slow cooker, low setting for 8 hours, shred with two forks, put back in juices, and heat for one more hour.

    Just tasted the short ribs, delicious.

    Definitely recommend a recipe from Chow Ciao, its short ribs + a stout beer and beef broth slow cooked on high for 6 hours on a bed of onions.

    Other protein friendly recipes I will be trying will be a shrimp, sausage and chicken jambalaya, and meat balls, etc etc.

    Beef Stew:
    1. Buy whatever beef you prefer. I bought already cubed beef at Trader Joes - Lean Stew Beef @ 140 cals/serving and I had about 1.5 pounds.
    2. Pat beef dry with paper towels and spice to your liking. I used salt, pepper, paprika, a little cayenne pepper, and minced garlic (garlic powder is OK).
    3. Sprinkle half a tbsp of flour onto the beef, rub on all pieces. Add half a TBSP of olive oil to beef and rub in.
    4. I buy already cleaned carrots to save time but basically you now put all your veggies in the slow cooker. I get the smallest potatoes I can find and cut them in half.
    5. Now you can either place everything in the slow cooker but I like to brown my meat before I put in the cooker. So I brown my meat, place it in the cooker, then add a half a cup of beef broth to the pan to warm it up.
    6. If you skip browning, just put in a half a cup of beef broth or water into the cooker with all the ingredients.
    7. Finally, add fresh or dried rosemary and thyme. Cook on low for 8-10 hours. The longer you cook it on slow, the more tender the beef will be - especially when using really lean beef. If you are around and want to stir everything in 7 hours then do so but don't take the lid off before then. At this point, you can add frozen peas to pot if you want.
    8. When cooking time has elapsed, take half a tbsp of flour and dissolve in warm water. I like to move everything to a pot to boil over and slowly add my flour mixture to thicken on high heat with constant stirring. Use any thickener you please. The point is to make it to your liking and consistency. Adjust salt and spices to taste. Sprinkle with fresh parsley and enjoy.

    Cornish Hen:
    1. Buy hen so it fits in your slow cooker. Marinade hen with minced garlic (or garlic powder), salt, pepper, and 1-2 tsp of olive oil depending on the size of your hen. I also stuffed my hen with fresh rosemary, thyme, and few whole garlic cloves. I marinaded for 24 hours but try to do it for at least 8.
    2. I seared the hen in a frying pan to brown all the sides but you could skip this if you want.
    3. Add whatever vegetables you want to the pot, half a cup of chicken stock or water, fresh herbs, seasoning to your taste.
    4. Cook breast side up on low for 8 hours. Again, I love using low temperatures to ensure moist meat.
    5. After 8 hours, remove hen and thicken vegetable sauce mix if desired.
    6. I made the rice and peas on the side when I got home from work.

    Pulled Pork:

    1. I used pork tenderloin because it's 130/140 cals per serving. Usually, pork shoulder or butt is used. Experiment and find out what you like. Again I love Trader Joes for meat even though it's expensive. They have all their calories listed and have a ton of lean meat. I will try this out with chicken breast too and see what happens.
    2. Cover meat with garlic, salt, pepper, paprika, chill powder, and cayenne pepper. I used half a cup of diet root beer for my liquid. I have used diet Dr. Pepper as well. I am sure water would be fine too. Add pork, sliced onions, and liquid to slow cooker and cook on low for 8 hours.
    3. At 8 hours, strain liquid to a pot and take out pork and place on plate. Take two forks and pull pork out to desired pieces.
    4. I like to boil the left over liquid and onions down to about a third of what was there and add whatever bbq sauce I have and mix it up. Then I put the shredded pork back in the cooker, add the sauce, and mix well.
    5. If you want to make things easier, after you strain the liquid, just add a third a cup of the liquid back to the cooker and the cooked onions, add your favorite sauce, and mix in shredded pork. Stir well.
    6. Cook on high for an hour and then stir before eating.

    Chicken Salsa:
    1. Pat dry chicken breast and add to slow cooker.
    2. Add your favorite salsa and two servings of your favorite beans to the slow cooker.
    3. Cook on low for 8 hours.
    4. After 8 hours, take two forks and shred meat.
    5. Add in frozen corn, stir well, add salt/spice to taste.
    6. Cook on low for another hour. Serve.

    Here is what I do.

    Find stew meat (or even chicken breast) and if it is not properly cut, then take a knife to it prior to cooking, potatoes (whatever variety you like), celery, mushrooms, bag of frozen peppers and onions and packet of Lipton's recipe secrets soup)



    You can just dump the meat in the crockpot or else you can pan fry it so there is no question about killing pathogens with adequate heat.

    Then you can find some potatoes you like (whatever variety you like). I usually get a mix of a sweet potato and either some red potatoes or idaho potatoes. Another option is to just find these in the freezer section and dump it 1/3 of the bag.



    Then add in whatever veggies you like such as celery, mushrooms, onion, etc.

    If you decide on using any of the frozen veggies, I suggest you let them soak in cold water for 5 minutes and dump and soak in fresh cold water again for 5 more minutes, then dump and then add to the crock pot as this will thaw the veggies out before they are added to the crock pot. I personally add my Lipton soup mix in first with a bit of water and then the meat and then the veggies, and cook on high for an hour or so and then turn it down and stir it once and go to bed.

    -teriyaki sauce (just for tenderness, DOES NOT make it taste like teriyaki)
    -Sirachi(a)? the red spicey cock sauce
    -cut up raw potatoes
    -cut up 2-3 bell peppers
    -cut up 2-3 onions

    Cook on low for 14-16hours. Not only will make the best pulled pork ever, will make your house smell like a food wet dream for a week

    Slow cookers are awesome. Chuck steak is beautiful when slow cooked. And it is only $8 a kg here in Australia.
