Im currently bulking and have upped my macros to about 150g protein, 75g fat, 250ish g carbs. I am having a problem hitting the carbs though...
can I just make sure to hit the cals with other protein and fat? is there any difference in body disposition if you eat less carbs and lets say instead 200g protein, 85g fat, and 200g carbs?

Hit you protein and fat requirements then fill in the rest of your calories with protein/fat/carbs as you want. So yes, you can lower the carbs and up the fats and protein if you like, there is no impact on your body composition; personally I also like more fat and protein as opposed to carbs (love me some steak and eggs).

A quick way to get in carbs is to put some rolled oats into your shakes. If you don't want to do that, theres no reason not to fill in the rest of your macros with whatever as long as you get your calories. I do reccomend getting as many carbs as possible. Carbs=glycogen, glycogen=fuller muscles and also will make you feel much better in the gym. Excess carbs always seem to make me feel much stronger in the gym, but its all personal preferance. Find what works for you. I've found that for me, if I try to cut carbs, I end up losing strength and looking flat almost immidiately.
