I have heard of crunches being bad for your lower back (over a long term) because of the spinal flexion involved but I think the squats are the more likely culprit.
Personally I don't like upper/lower, I don't see how you can hit every upper body muscle group in one workout unless it's 3 hours long. Lots of people do well with it... I don't see any reason to train 6x a week though, 4-5 is plenty. Rest days are important

Triceps: Skullcrusher
Quads: Leg Press (feet almost touching)
Hamstrings: One Leg Kneeling Leg curl (not a lot of gyms have this)
Calves: Standing Calves on machine

Sure, but you'd probably be fat. Don't worry about weight worry about what's in the mirror. Dirty bulking is not advocated by any of us (as of what I know, maybe HC but he has the genetics to stay lean while eating crap).
