I know it's around 1g per pound of bodyweight to gain mass, but what about when I'm satisfied with my build and just want to keep my muscle the way it is? How many grams per pound do I need then? And how often should I be working out to make sure I don't lose or gain any mass??

Incorrect.
You would need sufficient micro/macronutrient intake and resistance training (assuming a conditioned individual), the specifics of which are somewhat dependent on the amount of skeletal muscle mass carried by the individual in question.
OP: Intake of ~1 gram of protein per pound of lean body mass as well as 0.45 grams of dietary fat should be sufficient when at maintenance. Micronutrient sufficiency should always be ensured. Sufficient resistance training to preserve strength is also necessary, assuming a conditioned state.
